Apple Cinnamon Bran Mini Muffins

  • 1 & 1/4 Cup Natural Wheat Bran, not cereal - Bulk Aisle 5
  • 1 Cup King Arthur's Whole Wheat Pastry Flour - Aisle 2
  • 1/2 Cup Sucanat - Bulk Aisle 5
  • 2 & 1/2 Tsp. Rumford Baking Powder - Aisle 2
  • 1/2 Tsp. Simply Organic Ground Cinnamon - Aisle 2
  • 1/2 Cup Milk, of your choice - Aisle 1 Refrigeration
  • 1/3 Cup Spectrum Canola Oil - Aisle 3
  • 2 Eggs, of your choice - Aisle 1
  • 1 Medium-Sized Apple, peeled & finely chopped - Produce
  • Non-Stick Cooking Spray - Aisle 3

Preheat oven to 350 degrees fahrenheit. SPray cups in two miniature muffin pans with cooking spray. In a large bowl, stir together the bran flour, brown sugar, baking powder ,and cinnamon. In another bowl, whisk together the milk, oil, and eggs. Add the milk mixture to the bran mixture, stirring until just combined. Fold in the chopped apple. Spoon batter into the prepared muffin pans, filling each cup to the top. Bake for 12-14 minutes or until a toothpick poked into the middle of a muffin comes out clean.

Makes 20-22 miniature muffins.

Note: If you prefer, you can bake this batter as full-size muffins instead of miniature ones. Increase baking temperature to 375 fahrenheit and time 20 minutes. This yields 6-8 muffins.
