Arugula Salad with Aged Gouda

  • ½ tsp. Organic Woodstock Farms Dijon Mustard – Aisle 3
  • Morton Kosher Salt – Aisle 2
  • 2 Tblsp. Eden Red Wine Vinegar – Aisle 3
  • Fresh Ground Black Pepper
  • 6 Tblsp. Rapunzel Organic Extra Virgin Olive Oil – Aisle 3
  • ¾ cup coarsely grated Uniekaas Gouda – Deli
  • 8 cups Arugula – Produce
  • 1/3 cup dried tart cherries – Snack Aisle

To prepare the dressing whisk the mustard, vinegar, salt, & pepper in a small bowl. Stir in olive oil to form a smooth dressing. Arrange the arugula in the center of a large bowl. Sprinkle on cheese and cherries. Toss with just enough of the dressing to thoroughly coat the leaves.
