1 Whole Medium Sized Pumpkin – Produce
1 Cup Raisins – Packaged Bulk
2 Cups Apples, cored and chopped – Produce
1 Cup Chopped Pecans – Aisle 5
2 Tbsp Lemon Juice – Produce
1 Tsp Cinnamon – Bulk Spices
¼ Tsp Nutmeg – Bulk Spices
1/3 Cup Sucanat or Sugar – Aisle 5
Optional: Sour Cream or Whipped Cream – Aisle 1
Preheat oven to 350˚ F. Cut a several-inch circle through the pumpkin top to make “lid,” and clean inside of pumpkin by removing seeds and fibrous, stringy part. Place in baking dish. Mix all ingredients except sour cream or whipped cream, and fill mixture into pumpkin. Replace pumpkin “lid” and bake for 1 to 1 & ½ hours or until apples and pumpkin are tender. Serve hot or cold, scooping into pumpkin as well as the filling. Top with sour cream or whipped cream.
