Barbara's Bakery Puffins Muffins
- 1 Cup Barbara's Puffins Cereal (original or cinnamon), finely crushed (start with about 2 3/4 cups whole cereal) - Aisle 1
- 1/4 Cup Spectrum Canola Oil - Aisle 3
- 1/4 Cup Wildflower Honey - Bulk Aisle 5
- 1 Rose Acres Egg - Aisle 1
- 1 Cup Horizon Organic Milk or Silk Soy Milk - Aisle 1
- 1 1/4 Cup Unbleached or Whole Wheat Pastry Flour - Bulk Aisle 5
- 1 1/2 Tsp. Baking Powder (unsulphured) - Aisle 2
- 1/2 Cup Sea Salt - Bulk Aisle 5
- 1/2 Tsp. Baking Soda - Aisle 2
- 1/2 Cup Granulated Sweetener - Bulk Aisle 5
Preheat oven to 400 degrees fahrenheit. Line a 12 cup muffin tin with paper muffin cups. Mix together flour, baking powder, baking soda, salt. Add sweetener and crushed Puffins (if desired, add 3/4 cups nuts or raisins). In seperate bowl, mix oil, honey, egg, and milk until well blended. Add to dry ingredients, blending with wooden spoon until combined. do not over mix. Fill muffin cups to 3/4 full and bake for 18-20 minutes. Makes 12 muffins
