1 Tbsp Spectrum Olive Oil – Aisle 3                       

1 KY Proud Tomato, chopped – Produce                    

½ Medium Red Bell Pepper, diced – Produce           

1 Small Onion, diced – Produce 

2 Cloves Garlic, minced – Produce               

3 Green Onions, sliced - Produce

4 Ears Corn, kernels cut from cob – Produce           

½ Tsp Salt – Bulk Aisle 5

½ Tsp Frontier Paprika – Bulk Herbs & Spices         

½ Tsp Fresh Thyme, chopped – Produce

¼ Tsp Frontier Cayenne Pepper – Bulk Herbs & Spices

¼ Cup Water

 

Heat the oil in a large nonstick skillet, over medium heat. Add onion and cook, stirring, until starting to soften, about 2 minutes. Add bell pepper and garlic and cook, stirring, for 2 minutes more. Add corn kernels and water and cook, stirring, until tender-crisp, about 5 minutes more. Remove from heat and stir in tomato, green onions, thyme, paprika, salt and cayenne.
