Creamy Eggless Salad

 

 

 

14 oz. Package Firm Tofu – Aisle 1                        

½ Cup Vegenaise – Aisle 1

1 Tsp Fresh Lemon Juice – Produce                       

1 Tsp Turmeric – Bulk Spices

½ Tsp Dry Mustard – Bulk Spices                         

2 Celery Ribs, finely chopped – Produce

½ Cup Chopped Fresh Chives – Produce               

½ Tsp Salt – Bulk Aisle 5

½ Tbsp Black Pepper – Bulk Spices

 

 

Finely mash tofu with a fork in a bowl, and then drain in a sieve set over another bowl, about 15 minutes. Discard liquid. While tofu drains, whisk together mayonnaise, lemon juice, turmeric, and mustard in a bowl, then stir in tofu, celery, chives, salt, and pepper.
