Dad's Vegetarian Cauliflower Curry Soup
- 1 Organic Head of Cauliflower, diced into small pieces - Produce
- 1 Organic Yellow Onion, chopped - Produce
- 4 Cups Imagine Vegetable Broth - Aisle 2
- 1 Tbsp. Simply Organic Curry Powder, use less for a milder soup - Aisle 2
- 2 Cloves Garlic, diced - Produce
- 1 Stalk Celery, chopped - Produce
- 2 Tbsp. Spectrum Olive Oil - Aisle 3
Saute garlic, celery, and onion in olive oil fr 5 minutes, or until onions begin to soften. Add curry and stir. Then add diced cauliflower and stir. Pour in broth, cover, and reduce heat. Simmer for about 25 minutes or until cauliflower is soft. Now grab your blender and add soup in batches, blending until somewhat smooth. Be sure to leave some of the soup unblended for a little texture. Serve with a dollop of plain yogurt, a sprinkle of black pepper, and a sprig of fresh cilantro.
