  • 1 & 1/2 Cups Dried Lentils, sorted & rinsed - Bulk Aisle 5
  • 4-6 Cups Imagine Organic Vegetable Stock - Aisle 2
  • 1Tbsp. Simply Organic Pepper Flakes - Aisle 2
  • 3/4 Tsp. Celtic Sea Salt - Bulk Aisle 5
  • 1 Tbsp. Simply Organic Ground Cumin - Ailse 2
  • Fresh Organic Lemon Juice - Produce
  • 1 & 1/2 Tsp. Simply Organic Curry Powder - Aisle 2
  • Several Cloves Local Garlic, minced - Produce
  • 1-2 Tbsp. Fresh Organic Ginger, peeled & minced - Produce
  • 1 & 1/2 Tsp. Simply Organic Ground Turmeric - Aisle 2
  • 1 & 1/2 Cups Organic Onions, chopped - Produce

Combine lentils, 4 cups stock, red pepper flakes, salt & turmeric in pot. Bring to boil & reduce to simmer. Stir occasionally & cook until lentils are just tender. Add more liquid if desired to prevent sticking. Heat saute pan on medium high. Saute onions, garlic, ginger, cumin, & curry together until onions soften. If the mixture is sticking & browning too quickly, deglaze with a small amount of stock as needed. Stir in cooked lentils & 1 cup of stock to desired consistency. Simmer for 10 minutes. Add fresh lemon juice to taste. Serve hot over basmati rice or whole wheat pita bread.
