Fantastic Mexican Dip

• 1 1/2 cups Fantastic Foods Refried Bean Mix - Bulk Aisle 5
• 16oz. can Muir Glen organic diced tomatoes, drained slightly - Aisle 3
• 1 jar Guiltless Gourmet salsa - Aisle 4
• 1 onion, chopped - Produce
• 1 green pepper, diced fine - Produce
• 2 cups shredded Horizon Organic cheese - Aisle 1 or Cheese Case

Preheat oven to 400 degrees fahrenheit. Combine bean mix with 1 1/2 cups boiling water, stir together, cover, and let stand until the mix thickens. Combine reconstituted mix in casserole with tomatoes, salsa, onion, and green pepper. Stir in 1 cup of cheese and sprinkle the other cup on top. Bake for 25-30 minutes or until bubbly. Serve with baked or non-hydrogentated corn chips for a delicious treat! Great recipe for potlucks. Take leftovers home (if there are any), refrigerate, and serve warmed as a main dish over cooked brown rice.
