Honey Roasted Sweet Potatoes

• 6-7 Lbs. Sweet Potatoes, peeled and cut into 1-inch cubes – Produce
• Spectrum Cooking Spray – Aisle 3
• 5 Tbsp. Honey, divided – Bulk Aisle 5
• 4 Tbsp. Horizon Organic Unsalted Butter – Aisle 1 Refrigeration
• 3/4 Tsp. Unrefined Salt – Bulk Aisle 5 

Preheat oven to 375 degrees Fahrenheit. Place potatoes in single layer on large baking sheet coated with cooking spray. Lightly spray potatoes with cooking spray. Bake for 1 hour or until tender, stirring occasionally. Place the potatoes, 1/4 cup honey, butter, and salt in a large bowl. Beat with a mixer at medium speed until smooth. Drizzle with 1 Tbsp. honey.
