Hoppin’ John

 

 

1 Tbsp Olive Oil – Aisle 3                                

1 Cup Chopped Onion – Produce

2 Garlic Cloves, pressed – Produce                   

3 Cups Cooked Brown Rice – Bulk Aisle 5

1 Can (16oz.) Diced Tomatoes – Aisle 3               

½ Tsp Dried Basil – Bulk Herbs

¼ Tbsp Dried Thyme – Bulk Herbs                    

2 Cans Black-Eyed Peas, drained – Aisle 2

½ Cup Chopped Green Onions – Produce          

Salt & Pepper to Taste

 

 

In a large, deep skillet, heat olive oil over high heat. Sauté onion and garlic for 3-5 minutes, until onion is soft and slightly browned. Add rice, tomatoes, basil, and thyme, stirring well, and cooking until heated through. Add black-eyed peas and stir. Remove from heat. Stir in green onions and salt and pepper.
