Lotus Light Bhutanese Red Rice Stuffing
- 1 Cup Lotus Light Bhutanese Red Rice, cooked (follow package directions) - Aisle 2
- 1/2 Cup Natural Toasted Almonds, coarsely chopped (toast almonds in 350 degree oven for 15 min.) - Bulk Aisle 5
- 3 Tbsp. Spectrum Olive Oil - Aisle 3
- 1 Tbsp. Organic Orange Zest, minced - Produce
- 1/2 Cup Uncle Matt's Fresh Orange Juice - Aisle 1 Refrigeration
- 2 Cups Organic Onions, diced - Produce
- 2 Tbsp. Sn-J Soy Sauce - Aisle 3
- 1 Jalapeno, trimmed & finely chopped - Produce
Heat the olive oil in a large skillet, add onions & cook for 10 minutes. Stir in the orange zest & garlic and cook for 2 minutes. Add the cooked rice, orange juice, soy sauce, almonds, & jalapeno. Stir to blend. cover & cook until heated through. Makes about 6 cups of stuffing.
