Low Fat Egg-Like Salad
- 2 Tbsp. Veganaise - Aisle 3
- 1 Tbsp. Sweet Pickle Relish - Aisle 3
- 1 Tsp. Distilled White Vinegar - Aisle 3
- 1 Tsp. Prepared Mustard - Bulk Herbs & Spices
- 1/2 Tsp. Sucanat - Bulk Aisle 5
- 1/2 Tsp. Simply Organic Ground Turmeric - Aisle 2
- 1/4 Tsp. Simply Organic Dried Dill Weed - Aisle 2
- 1 Tbsp. Simply Organic Dried Parsley - Aisle 2
- 1 lb. Firm Tofu, well drained - Aisle 1
- 1 Tbsp. Frontier Organic Minced Onion - Bulk Herbs & Spices
- 2 Tbsp. Frontier Organic Minced Celery - Bulk Herbs & Spices
- Celtic Salt, to taste - Bulk Aisle 5
- Frontier Organic Ground Black Pepper, to taste - Bulk Herbs & Spices
In a small bowl, combine veganaise, sweet pickle relish, vinegar, mustard, sugar, turmeric, dill, and parsley. Mix well, and reserve. Place drained tofu in a large bowl. and crumble with a fork. Stir in onion and celery. Mix in reserved mixture. Season to taste with salt and pepper. Chill for several hours to allow flavors to blend. Serve between two slices of whole grain bread with lettuce and tomato.
