Mexican No Crust Quiche
- 4 organic eggs or egg substitute - Aisle 1
- 1/4 lb. browned ground beef or substitute with taco flavor soy protein - Meat Case or Aisle 1
- 1 Tbsp. organic flour - Bulk Aisle 5
- 1 Tbsp, or more, organic butter or margarine - Aisle 1
- 1/2 cup organic salsa or diced tomatoes/onions - Aisle 2 or Produce
- 1 cup shredded organic cheese of choice (reserve 1/2 cup) - Cheese Case
- 1 Tsp. Simply Organic garlic powder - Aisle 2
- 1/8 Tsp. Simply Organic black pepper, more to taste if needed - Aisle 2
- 1 Tsp. Frontier nonorganic chili powder - Aisle 2
- Sour Cream, optional - Aisle 1
- 1 Tsp. Fresh cilantro (reserved) - Produce
Preheat oven to 350 degrees fahrenheit. Mix all ingredients together in mixing bowl, keeping half the cheese and cilantro set aside. Lightly grease 9-inch pie or cake pan. Pour mix in to pan. Place in preheated oven for 15 minutes. Sprinkle on remaining cheese and cilantro. Cook for 10-15 minutes until firm. Cut into slices.
