Mexican Picante
- 1 can black beans, drained - Aisle 3
- 3 large fresh tomatoes, diced or 1 large can diced tomatoes, drained - Produce or Aisle 3
- 1 sweet onion, diced - Produce
- 1 small can green chilies - Aisle 3
- 1/4 cup fresh shredded ginger - Produce
- 1/2 cup olive oil - Aisle 3
- 1 medium cucumber, peeled, chopped, & pureed - Produce
- 1/4 cup finely chopped garlic - Produce
- 1/2 cup finely chopped cilantrto - Produce
- 1/2 cup sweet corn - Aisle 2
- salt & pepper, to taste - Aisle 2
- 1/2 cup balsamic vinegar - Aisle 3
Combine the ingredients and chill. Great served with non-hydrogenated corn chips.
