Mock "Chicken" Salad

  • 2 Cups Textured Vegetable Protein (TVP) – Bulk Aisle 5
  • 1 & 3/4 Cups Imagine Hot Vegetable Broth Aisle 2
  • 1 Tbsp. Bragg’s Liquid Aminos – Aisle 3
  • 1 Box Silken Firm Tofu – Aisle 3
  • 4 Tbsp. Nakano Seasoned Rice Vinegar – Aisle 3
  • 2 Tsp. Tree of Life Spicy Stoneground Organic Brown Mustard – Aisle 3
  • 1 Cup Organic Onions, chopped – Produce
  • 1/3 Cup Tree of Life Organic Dill Pickle Relish – Aisle 3

In a mixing bowl, pour Bragg’s and hot broth over TVP to re-hydrate. Cream tofu in a blender with vinegar and mustard. Mix tofu, TVP, onions and relish together. Add more vinegar if needed and chill thoroughly. Use as a sandwich filling or stuffed inside a fresh tomato on a bed of lettuce.
