2 lbs Squash or Zucchini, sliced – Produce

5 Slices Cheddar Cheese – Cheese Case

1 Green Bell Pepper, sliced – Produce                  

Fresh Basil, Chopped – Produce

½ Yellow Onion, peeled & sliced – Produce          

Salt – Bulk Aisle 5

1 Clove of Garlic, chopped – Produce                  

Pepper – Bulk Herbs & Spices

1 Large Tomato, peeled & cut into wedges – Produce

Spectrum Organic Olive Oil – Aisle 3

 

Put onion, garlic, bell pepper, and squash into a large saucepan with a couple tablespoons of olive oil. Start browning over medium-high heat. As you are browning, sprinkle basil on the vegetables. When vegetables are slightly browned, remove from heat, add the slices of cheese, and cover pan. Place Tomatoes in a skillet over medium-high heat for about 5 minutes, stirring occasionally. Add tomatoes to the rest of the vegetables and stir. Salt and pepper to taste
