Nutty Quinoa Salad

  • 1Cup AncientHarvest Quinoa - Aisle 2
  • 2 Tsp. Grated Orange Rind - Produce
  • 3 Organic Green Onions - Produce
  • 1/4 Cup Spectrum Canola Oil - Aisle 3
  • 2 Tbsp. Chopped, Fresh Mint Leaves - Produce
  • 1/2 Cup Organic Celery - Produce
  • 2 Cups Highbridge Water
  • 1/2 Cup Organic Raisins - Produce
  • 1/2 Cup Peanuts - Bulk
  • 1/2 Cup Organic Shredded Carrots - Produce
  • 1/2 Cup Organic Red Peppers - Produce

Combine quinoa and water in large saucepan. Bring to boil. Reduce heat, cover and simmer for 10 minutes. Add raisins, and continue to cook until liquid has evaporated. Remove from heat. Spread on baking sheet, let cool completely. In large bowl, combine all ingredients. Toss. Serve chilled with cold cuts.
