Oatmeal Muffins
- 4 Cups Organic Rolled Oats – Bulk Aisle 5
- 1/2 Cup NuNaturals Stevia Blend Powder – Bulk Aisle 5
- 5 Cups All-Purpose Flour – Bulk Aisle 5
- 2 Tsp. Baking Soda – Bulk Herbs & Spices
- 2 Tsp. Salt – Bulk Aisle 5
Mix all dry ingredients together. You may then add any or all of the following:
- Thompson Raisins
- Dried Organic Cranberries
- Chocolate Chips
- Walnuts
- Pecans
- Almonds
- Unsweetened Coconut, with 1/4 Cup applesauce or milk added
In a separate bowl, combine:
- 1/2 Cup Oil – Aisle 3
- 4 Eggs – Aisle 1
- 1 Qt. Buttermilk – Aisle 1
- 2 Tsp. Vanilla Extract – Aisle 2
After combining wet ingredients, add the liquid to the dry ingredients and mix well. For a regular size muffin tin, spray with non-stick cooking spray and bake at 400 degrees Fahrenheit for 15-20 minutes or until done. For large size muffin tin, bake at 375 for 23 minutes or until done. Muffin batter may be stored in air-tight glass container and can be refrigerated for up to 6 weeks. Muffins may also be frozen.
