Orange Chicken & Brown Rice

  • 1 lb. Bell & Evans Boneless & Skinless Chicken Thighs, cut into 2-inch pieces - Meat Dept.
  • 1 Tbsp. Bionaturae Olive Oil - Aisle 3
  • 1 Organic Medium Onion, chopped - Produce
  • 1 & 1/2 Cups Unlce Matt's Orange Juice - Aisle 1
  • 2 Tbsp. Simply Organic Curry Powder - Aisle 2
  • Salt & Pepper, to taste - Aisle 2
  • 14oz. Imagine Chicken Broth - Aisle 2
  • 1/2 Cup Basmati Brown Rice - Bulk Aisle 5
  • 2 cloves Organic Local Garlic, pressed - Produce

Saute chicken and onion in olive oil until brown. Add broth, orange juice, and seasonings. cover and simmer for 45 minutes. Add rice to pot, lower heat and cover. Do not stir once rice is added. Cook until rice is done, about 50 minutes. Add water if mixture becomes too thick.
