Pasta with Asiago & Spinach

  • 4 oz. Sun Dried Tomatoes, Packaged with Oil - Produce
  • 1/8 Tsp. Salt & Pepper - Aisle 2
  • 2 Tbsp. Extra Virgin Olive Oil - Aisle 3
  • 12 oz. Penne, Cooked & Drained - Aisle 3
  • 10 oz. Spinach, Torn - Produce
  • 3 Cups Boiling Water
  • 2 Cloves of Garlic, Minced - Produce
  • 1/2 Cup Parmesan Cheese, Grated - Cheese Dept.
  • 3/4 Cup Asiago Cheese, Grated - Cheese Dept.

Combine boiling water and sun dried tomatoes in a bowl. Let stand for 30 minutes. Drain and chop. Next combine tomatoes, oil, salt, pepper and garlic in a large bowl. Add pasta and spinach and gently toss. Sprinkle with the cheese and toss gently again. Serve with crusty bread or a side dish.
