Pear and Feta Salad
- 4 Tbsp. Fresh Lemon Juice – Produce
- 5 Tbsp. Mediterranean Organic Extra Virgin Olive Oil – Aisle 3
- 5 oz. Arugula or Mixed Baby Greens – Produce
- 2 Ripe Green Pears – Produce
- 12 oz. Feta Cheese, drained & washed – Cheese Dept.
- 1 Pkg. Fresh Mint, leaves only – Produce
Put the lemon juice into a small bowl and season. Add 1 Tbsp. cold water and whisk in the olive oil. Taste for flavor then adjust seasoning if necessary. Mix a third of the dressing with the arugula or mixed baby greens and arrange in the center of a large platter. Holding the pears by the stem, thinly slice vertically from top to bottom, discarding the central slice with its seeds and core. Arrange on the platter around the salad greens and drizzle with another third of the dressing. Finally, cut the feta into thin slices and arrange with the pears. Sprinkle the mint leaves over the salad. Drizzle with the remaining dressing and serve.
