Pineapple Coleslaw
- 3 cups shredded green cabbage or a combination of red and green - Produce
- 1 shredded carrot - Produce
- 8oz. can Native Forest pineapple tidbits in juice - Aisle 2
- 1/4 cup Brown Cow plain yogurt - Aisle 1
- 1/4 cup Spectrum mayonnaise - Aisle 3
- Frontier Salt to taste - Aisle 2
- Raisins for garnish, optional - Produce
Drain pineapple tidbits, reserving one tablespoon of the juice. In a small bowl, stir in plain yogurt, mayonnaise, tablespoon reserved juice, and salt to taste. Pour over shredded cabbage and carrots and toss to mix. Garnish with raisins if desired.
