Pizza Squares

  • Pizza is ideal for lunch boxes as you can use any combination of vegetables you know your kids will like in order to slip in some veggie servings. For the healthiest pizzas, buy in bulk and freeze whole grain pizza crusts, made from whole wheat or spelt flour. Freeze and use as required. Children are more likely to eat something they helped prepare, so share the pizza building at dinner the night before. The next day, use cookie cutters to cut cold pizza into shapes for the lunch box.
  • 4 whole wheat flat breads, such as Italian Focaccia bread, Indian Naan bread, or Pita bread - Aisle 2 or 3 for Rustic Crust Pizza Crust
  • 1/4 Cup Muir Glen Tomato Paste - Aisle 3
  • 1/2 Cup Favorite Vegetables
  • 4 oz Nitrate Free Ham, cut into small pieces - Meat Dept.
  • 1 Cup Shredded Mozzarella Cheese - Cheese Dept.

Preheat oven to 425 degrees fahrenheit. Spread each flat bread with 1 Tbsp. tomato paste and top with 2 Tbsp. of each vegetable and 1oz ham. Place on baking sheet and sprinkle equally with shredded cheese. Bake until cheese bubbles. Makes 4 servings.
