Roasted Vegetable Medley

  • 2 Organic Parsnips, peeled & cut into 1-inch pieces - Produce
  • 3 Cups Butternut Squash, peeled & cubed - Produce
  • 1 Organic Fennel Bulb, trimmed & cut into 1-inch pieces - Produce
  • 1 Organic Onion, cut into wedges - Produce
  • 3 Tbsp. Spectrum Olive Oil - Aisle 3
  • 1 & 1/2 Tsp. Simply Organic Ground Cumin - Aisle 2
  • 1 & 1/4 Tsp. Simply Organic Chili Powder - Aisle 2
  • 1 Tsp. Frontier Organic Ground Cinnamon - Bulk Herbs & Spices
  • 1/2 Tsp. Simply Organic Turmeric - Aisle 2

Preheat oven to 450 degrees fahrenheit. Combine vegetables in a large bowl. Combine remainging ingredients in a small bowl. Sprinkle over squash mixture and toss until coated. Spread in a baking sheet. Roast for 20-25 minutes or until the vegetables are tender.
