Roasted Garlic Hummus

  • 1 Head Garlic, roasted according to directions below – Produce
  • 2 Cans (15oz. each) Eden Organic Garbanzo Beans, drained & rinsed with water & then drained again Aisle 2
  • 1 Cup Tahini – Aisle 3 or Aisle 1 Refrigeration
  • 2/3 Cup Lemon Juice (2-3 lemons) – Produce
  • 2 Medium-Sized Cloves Raw Garlic, minced finely – Produce
  • 1/2 Tsp. Unrefined Salt, or more to taste – Aisle 2
  • 7/8 Cup Water
  • Mediterranean Organic Extra Virgin Olive Oil – Aisle 3
  • Frontier Organic Paprika – Bulk Herbs & Spices
  • Fresh Organic Parsley - Produce

Roast garlic head: slice off top 1/3 of head, place in a ramekin, fill dish with water to immerse 1/3 bottom of head, drizzle with a little olive oil, cover with foil, and bake at 325 F, for 1 hour. Let cook a little before proceeding.

In food processor, add ingredients with only 1/2 cup water to start. Process until smooth, adding more water if necessary. Pour into serving bowl and top with olive oil, paprika, and snipped parsley. Delicious with toasted pita bread cut into triangles.
