Salmon Dengaku (Japan)

  • 4 Serving Size Salmon Steaks, (red snapper, scallops, or other fish fillets can also be used - Meat Dept.

Dengaku Miso Topping:

  • 2 oz Shiro Miso - Aisle 3
  • 1 Tbsp. Eden Mirin - Aisle 3
  • 1 Tbsp. Imgain Veggie Stock - Aisle 2
  • 1 Egg Yolk - Aisle 1 Refrigeration

Broil or bake salmon steaks.  In a 2-quart saucepan, mix miso topping ingredients, excpet egg yolk and place over hot water.  Or put mis topping excpet egg yolk in top of double broiler.  Place the top of double broiler over simmering water and stir gently.  Add egg yolk and mix thoroughly until smooth and glossy.  Baste broiled salmon steaks and broil until topping turns light brown.
