Savory Potatoes

  • 1 medium onion, chopped (1/2 cup) - Produce
  • 1 small garlic clove, crushed - Produce
  • 2 Tbsp. Oilio Beato olive oil - Aisle 3
  • 3/4 cup chopped parsley - Produce
  • Simply Organic freshly ground black pepper - Aisle 2
  • 1 cup Pacific Organic chicken broth - Aisle 2
  • 6 medium potatoes - Produce

Saute onion and garlic in olive oil until soft. Stir in parsley, pepper and broth. Remove from heat. Pare and thinly slice the potatoes. Layer the slices in broth in the skillet. Bring to a boil. Reduce heat, cover and simmer until potatoes are tender, about 20 minutes. With a slotted spoon, lift potatoes into a heated serving dish and pour cooking liquid over them.
