Scarlet Dip Delight

  • 1 organic orange - Produce
  • 7oz. cooked beets until tender (2-3 medium beets), peeled - Produce
  • 2/3 cup Horizon sour cream - Aisle 1
  • freshly ground black pepper - Herbs & Spices
  • strips of celery, zucchini, cucumber, and fennel for dipping - Produce

Make the orange rind garnish: With a zester or vegetable peeler, remove a few strips of rind from the orange. If using a vegetable peeler, the pieces of rind will need to be cut into very fine strips with a sharp knife. Roughly chop the cooked beets and place in a blender or food processor with the juice from the orange a blend until smooth. Transfer the beet mixture into a bowl and add sour cream, mixing thoroughly. Season to taste with freshly ground pepper. Cover and chill. To serve, pour into serving dish and garnish with the orange rind. Serve with vegetable strips.
