Scrambled Eggs With Spinach
- 12oz. pkg. Earthbound baby spinach leaves - Produce
- 2 Tbps. Olio Beato olive oil - Aisle 3
- 1/4 cup minced onion - Produce
- 3-4 Tbsp. water
- 5 Rose Acres Eggs, beaten - Aisle 1
- Simply Organic Black Pepper & Redmond Real Salt, to taste - Aisle 2
Coarsely chop the baby spinach leaves. Heat the oil in a large, heavy skillet and cook onion until crisp tender. Add the chopped spinach and cook, stirring often, until spinach is tender, about 5-7 minutes. Add a bit of water while the spinach is cooking as needed to keep the mixture moist. Add the eggs to the skillet and cook and stir so the eggs scramble with the spinach, about 4-5 minutes longer. Season with salt and pepper and serve.
