Tempeh Mock Chicken Salad
- 8oz. Soy Tempeh, plain without added grains, cut into cubes - Aisle 1 Refrigeration
- 1/2 Cup Mayonnaise (select GF, WF,EF, or vegan) - Aisle 3
- 2 Tbsp. Tamari, gluten free - Aisle 3
- 1 Rib of Celery, finely chopped - Produce
- 1/4 Cup Red Onion, or 2-3 Green Onions, minced - Produce
- 2 Tbsp. Fresh Parsley, snipped with scissors - Produce
- 1/2 Cup Pecans or Walnuts, chopped - Bulk Aisle 5
Steam tempeh for 20 minutes over boiling water. Meanwhile, prepare and combine the remaining ingredients. When the tempeh is ready, drain well, let it cool for 10 minutes, then stir into the rest. Chill and serve.
