Tempeh Reuben

  • 1 Slice of Light Life Tempeh, cut in 1/2 & fillet each half, making 4 pieces - Aisle 1
  • 1/4 Cup eden Organic Sauerkraut, well drained - Aisle 3
  • 1 slice Swiss Cheese - Cheese Dept.
  • 1 Tbsp. Annie's Thousand Island Dressing - Aisle 3
  • 2 Ezekiel Whole Wheat Spelt Buns - Freezers
  • 1 Tsp. Horizon Organic Butter - Aisle 1

Heat skillet over medium heat. For each sandwich, brown tempeh slice on both sides in skillet, then remove from skillet. Spread butter over one side of one slice of bread. Place bread butter-side-down in skillet, and top with tempeh, Swiss cheese, & sauerkraut. spread butter on the top of remaining slice of bread, and place on top of sauerkraut. Cook until toasted on one side, flip, & continue cooking until cheese melts.
