8 Oz. Light Life Tempeh, diced into ½ inch cubes               

1 Stock Celery, chopped                                          

½ Cup Onion, finely diced                                          

4 Tbsp Vegenaise or other Mayonnaise

1 Tsp Westbrae Mustard

2 Tbsp Fresh Parsley, chopped

1 Tbsp Vegetarian Chicken Broth

¼ Tsp Black Pepper

¼ Cup Water                                                        

Unrefined Salt, to taste

 

Steam diced tempeh for 15 minutes over simmering water. In a medium bowl, mix the broth powder and pepper with the ¼ C water. Add steamed tempeh and let marinate 15 to 30 minutes. Drain tempeh, discarding liquid. Combine drained tempeh with remaining ingredients. Serve in sandwiches or on crackers, on top of a green salad or stuffed into a tomato.  Makes enough for 2 to 3 sandwiches
