Counterculture Ferments started in Lexington in 2018 on the founders’ kitchen counters. The two friends brought together cabbage, fresh vegetables and spices with sea salt to create natural and wild ferments. They utilize the ancient process of lacto-fermentation to create probiotic-rich foods that promote gut health while also breaking down vegetables to increase bioavailability of vitamins and nutrients that are more digestible.
